Summer recipe: pasta with vegetables and basil

Our summer recipe today is a plate to eat with the whole family. In ours we have become accustomed to eating spelled instead of wheat and we love it, in addition to sitting great and feeling less bloated than with wheat. Ingredients for 4 people (2 adults and 2 children)

  • 500 g fusilli (spiral paste)
  • 1 package of cherry tomatoes
  • 1 zucchini
  • 1 red pepper
  • 4 tablespoons olive oil
  • 1 chopped garlic
  • 1 tablespoon basil leaves cut into strips

    Preparation

    * We wash the vegetables. Cut the cherry tomatoes in half and the zucchini and the pepper into small dice.
  • Heat the olive oil in a thick-bottomed saucepan and add the chopped garlic. We brown it for 1 minute and add the vegetables and basil.
  • We lower the heat and let the vegetables be done for about 10 minutes over medium heat.
  • While the vegetables are made, we can cook the pasta according to the cooking time indicated on the package. We drain it and throw it in the casserole with vegetables.

For the dish that you will separate for you, you can add a pinch of chilli pepper to give it a spicy touch. If we serve the pasta hot, you can sprinkle it with parmesan cheese powder.
